Mediterranean Baked White Fish

Mediterranean Baked White Fish

White fish is the perfect canvas for your favorite vegetables and herbs. I love white fish as it's low on fat (easy on the digestion).

 

Ingredients:

  • 1 ½ lb white fish fillet like cod or halibut
  • 1 tbsp garlic infused olive oil    
  • Juice of 1/2 lemon 
  • 8 oz of cherry tomatoes, halved
  • 3 oz pitted olives, chopped 
  • 1 bunch of scallion tips, chopped 
  • 1 tbsp fresh thyme leaves
  • 2 tsps dried oregano 

 

Instructions: 

  1. Heat the oven to 425 F.
  2. Pat the fish dry and season with salt and pepper on both sides. Brush a baking dish with a little garlic infused olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  3. In a medium mixing bowl, combine the tomatoes, olives, scallions, and spices. Add a very small pinch of salt and ground pepper. 
  4. Pour the tomato and olive mixture over the fish.
  5. Bake in the heated oven for 15 to 20 minutes.
  6. Serve with a raw salad, roasted veggies, potatoes, and/or rice.
