Cucumber Tomato Salad

Leafy greens and cucumbers are fantastic for the lymphatic system and hydrating the body. Proper flowing lymph is imperative to good digestive health. I call this salad my medicine rather than a meal. The salad should feel rather large on purpose.
Cucumber Tomato Salad Recipe:
- 3 cups chopped tomatoes
- 1 cucumber, sliced
- 1 cup chopped parsley
- 1/2 cup chopped dill
- ½ cup chopped scallion (green tips only)
- 8 cups of red leaf lettuce
- Juice from 1-2 oranges
- 1-2 tbsp maple syrup
- Optional: canned sardines, fresh salmon/cod/halibut, white potato (choose one only)
Instructions:
- Place the salad vegetables and the leafy greens of your choice in a bowl and mix them.
- In a separate bowl, make the dressing. Mix the fresh orange juice and maple syrup.
- Pour dressing over salad.
- Add in optional protein or carbohydrate.
Serves 1-2
