Cucumber Tomato Salad

Leafy greens and cucumbers are fantastic for the lymphatic system and hydrating the body. Proper flowing lymph is imperative to good digestive health. I call this salad my medicine rather than a meal. The salad should feel rather large on purpose.

 

Cucumber Tomato Salad Recipe:

  • 3 cups chopped tomatoes 
  • 1 cucumber, sliced 
  • 1 cup chopped parsley
  • 1/2 cup chopped dill
  • ½ cup chopped scallion (green tips only)
  • 8 cups of red leaf lettuce
  • Juice from 1-2 oranges
  • 1-2 tbsp maple syrup
  • Optional: canned sardines, fresh salmon/cod/halibut, white potato (choose one only)

 

Instructions:

  1. Place the salad vegetables and the leafy greens of your choice in a bowl and mix them. 
  2. In a separate bowl, make the dressing. Mix the fresh orange juice and maple syrup. 
  3. Pour dressing over salad. 
  4. Add in optional protein or carbohydrate. 

 

 Serves 1-2
